Of course all of us have heard of the No Glutten-No Casin diet.. but as I'm reading about it.. I'm SHOCKED that it's not more OUT THERE .. and that Doctors aren't up on this stuff..
According to the book, "Living Glutten Free for Dummies" by Danna Korn, the Human digestive systems can't handle wheat.. as much as we give it anyway. Cows- have 4 stomachs.. but us.. only 1 - and here is the list of things that happen to people who have a glutten sensitivity - or Celiac disease and are undiagnosed. Here are some of the symptoms- fatigue, gastrointenstinal distress including acid reflux, headaches and migranes, weight gain or loss, inability to concentrate, infertility, joint, bone or muscle pain, depression and respiratory problems! Also, ADD, AUTISM and ADHD are also symptoms and people with these symptoms can improve by going off Glutten! (is SPD a part of this group? I don't know.. I'll be reporting in... as we do it more)
We've been living mostly glutten free for a few weeks and there is an immediate difference. Just yesterday in church, Jeremy could pay attention and sang along. This was the first time in years OFF meds that he could do that.
We've recently bought a bread machine to make our own bread, pizza dough, flat breads, etc...
Yes.. it's a big process.. and life change.. but we're all doing it.. and I will continue to report our results to this diet. We're also mostly off dairy products.. using substitutes.. thats not quite as hard to be honest. Once the milk is gone and your child has a few upsets over it.. he gets used to Almond, oatmeal or the other subsitutes that are out there. (we don't use much soy for boys - estrogen levels, etc.. )
There is a lot to learn but I love this book. It's written from a mom whose baby was losing so much weight and no doc could determine the cause.. she's got a support group and is an advocate.
The book is great.. and I''ll continue writing more as we see any results!
